‘Everything bagel’ salmon and potato salad is a 20-minute summer saviour

Flaky hot-smoked salmon and tender potatoes tossed in a dressing flavoured with “everything bagel” seasoning transforms a deli favourite into a speedy midweek winner.

All the flavours of a New York lox bagel, reimagined as a texture-rich potato salad. Chunks of hot-smoked salmon and tender potatoes are tossed in a dressing spiked with “everything bagels” seasoning, creating a dish that’s as comfortable at a Sunday brunch as it is on a Tuesday night dinner table.

Ingredients

  • 1 small red onion

  • 1 tbsp baby capers, rinsed

  • 1 tsp everything bagel seasoning (see note)

  • ¼ cup red wine vinegar

  • ¼ cup extra virgin olive oil

  • 1kg kipfler potatoes, halved lengthwise

  • 450g hot-smoked salmon, flaked

  • 4 x 100g burrata

  • 2 tbsp chopped dill

Method

  1. Step 1

    Thinly slice the onion and place it in a bowl with the capers, everything bagel seasoning, vinegar and oil. Season with salt and pepper and mix to combine. Set aside to allow the onion to pickle.

  2. Step 2

    Place potatoes in a saucepan of cold salted water over high heat. Bring to a boil, then simmer for 8-10 minutes until the potatoes are fork-tender. Drain and rinse under cold water to stop the cooking process.

  3. Step 3

    Place the potatoes in a bowl with half of the everything bagel dressing and gently toss to combine.

  4. Step 4

    Divide the salad between bowls. Top with salmon flakes, burrata and dill. Add another grind of black pepper and serve with the extra dressing on the side.

Note

Everything bagel seasoning contains all the ingredients that usually season bagels, such as black and white sesame seeds, poppy seeds, dried garlic and onion, and salt flakes. It is available in supermarkets.
