I have this salad on high rotation. The dressing is creamy, but lightened by the addition of yoghurt.

Ingredients

  • ¼ cup mayonnaise

  • ¼ cup yoghurt

  • 1 tbsp Dijon mustard

  • 1 tbsp lemon juice

  • ¼ tsp honey

  • salt and pepper, to season

  • 1 head baby cos lettuce, leaves separated

  • 1 avocado, peeled and cut into wedges

  • 6 cherry tomatoes, halved

  • ¼ red onion, very thinly sliced into rings

  • 100g very thinly shaved prosciutto

  • freshly grated parmesan, to serve

Method

  1. Step 1

    Combine the mayonnaise, yoghurt, mustard, lemon juice and honey in a bowl and season well with salt. Add plenty of black pepper and mix well.

  2. Step 2

    Arrange the lettuce leaves on a plate and top with the avocado, cherry tomatoes and onion. Drizzle liberally with the dressing, add the prosciutto, grate over plenty of parmesan and finish with more freshly ground black pepper.
