Adam Liaw’s frozen fruit iced yoghurt
A microplane grater and some frozen fruit are all you need to make this easiest of desserts. Add a little sweetened yoghurt and you’re in heaven.
Ingredients
2 mangoes, peeled, deseeded and cut into large chunks
2 cups strawberries, stalks removed
4 cups yoghurt, chilled
1 tsp vanilla extract
½ cup icing sugar, or to taste
zest of 1 lime
Method
Step 1
Place the fruit on a tray lined with baking paper and freeze for at least 6 hours until completely solid.
Step 2
Whisk the vanilla and icing sugar into the yoghurt. Chill in the fridge. When ready to serve, divide the yoghurt between 4 chilled serving plates or bowls.
Step 3
Using a microplane, grate the mango over one side of the yoghurt and the strawberry over the other side. Grate a little lime zest over the fruit and serve immediately.
Adam’s tip: If you want to save even more time, use pre-packaged frozen mangoes, strawberries etc when making the iced yoghurt. I think this dessert works best with fruits that are quite firm.
