Guacamole

I like a guacamole that is well seasoned, bright with fresh lime juice and has a bit of texture. Get someone else to pour the margaritas while you make this just before serving. Use a fork to crush the avocado and mix it up but don't go too far – you want to leave some small chunks of avocado in there. Check the seasoning before you serve to ensure you have the balance of flavours right.
Ingredients
2 large hass avocados
1 jalapeno, seeds removed and finely diced (optional)
40g red onion, finely diced
40g chopped fresh coriander
sliced radishes (optional)
1½-2 tbsp fresh lime juice
1 tsp fine sea salt
Method
1. Place all the ingredients in a bowl and use a fork to crush and mix together until they're combined but not completely smooth.
2. Serve with corn chips or as a condiment for tacos.
Serve with my tacos al pastor and banana, caramel and rum tres leches cake for a Mexican fiesta.
