A piadina is an Italian flatbread, and makes a fabulous fancy toasted sandwich when you wedge a few choice ingredients inside one and and flip it on a frying pan.

Ingredients

  • 4 large flatbreads

  • 12 slices prosciutto

  • 8 long-stemmed marinated artichokes, halved lengthwise

  • 8 slices smoked provolone cheese

  • 1/4 cup extra virgin olive oil

To serve

  • 1/4 tsp chilli flakes

  • 1 tsp chopped rosemary

  • lemon wedges

Method

  1. Step 1

    Lay flatbreads on a clean surface. Place the prosciutto, artichokes and cheese over half the surface of each bread. Fold in half to enclose. 

  2. Step 2

    Heat half the oil in a large nonstick frying pan over medium heat. Add two piadina and cook for 2 minutes, carefully flip and cook for a further 2 minutes, or until golden and cheese has melted. Repeat with remaining oil and piadinas. 

  3. Step 3

    Cut into wedges and serve with chilli, rosemary and lemon wedges.
