Papas a lo pobre is a dish of humble ingredients that packs a big flavour punch. Be sure to season it with plenty of salt and pepper.

Ingredients

  • 4 potatoes (long, thin ones preferred)

  • 5 tbsp olive oil

  • 1 red onion, thickly sliced

  • 1 red capsicum, thickly sliced

  • 4 cloves garlic, bruised

  • salt and black pepper, to season

  • 2 tsp finely shredded parsley

Method

  1. Step 1

    Slice the potatoes into rounds about 1cm thick, place in a large saucepan and cover with cold water. Season well with salt, bring to a simmer and simmer for 10 minutes. Drain, reserving a little of the potato water.

  2. Step 2

    Heat a very large frying pan over medium heat and add the oil. Fry the onion, capsicum and garlic cloves until lightly browned. Add the potatoes and fry for 10 minutes, mixing gently until the potatoes are tender (add a little of the potato water if the pan gets too dry). Season with salt and pepper and scatter with shredded parsley to serve.
