Adam Liaw’s everything fritters
Use this recipe as a base to turn just about any leftovers that aren’t enough for a full meal into something filling and delicious.
Ingredients
2 cups “something” (mixed raw vegetables, cooked leftovers, kimchi etc), roughly chopped
2 tbsp vegetable oil
½ cup sour cream, to serve
freshly ground black pepper, to serve
lemon wedges, to serve
FRITTER BASE
½ cup self-raising flour
2 eggs
½ tsp salt, plus extra to season
3 zucchinis, grated
1 cup grated cheese (optional)
Method
Step 1
Combine the “something” with the fritter base ingredients and stir to form a thick mixture. You may need to add a splash of water if your “something” is very dry.
Step 2
Heat a large frying pan over medium heat and add the oil. Spoon about ½ a cup of mixture into the shape of a small patty and fry for about 4 minutes on each side until golden and cooked through. Repeat for the
remaining mixture.Step 3
Serve with a dollop of sour cream, ground black pepper and lemon wedges on the side.
