Honey joy meets apple crumble for a dessert that tastes like home with a hint of nostalgia. Just add vanilla ice-cream.

Ingredients

Apple filling

  • 6 Granny Smith apples, peeled, cored and cut into 1cm dice

  • juice of 1 lemon

  • 1 tsp cinnamon

  • 2 tbsp brown sugar

  • ¼ cup caster sugar

OAT TOPPING

  • 50g unsalted butter, melted

  • 30g caster sugar

  • 1 cup rolled oats

cornflake topping

  • 25g unsalted butter, melted

  • ¼ tsp flake salt

  • 20g caster sugar

  • 1 tsp honey

  • 1 cup cornflakes

Method

  1. Step 1

    Heat your oven to 160C fan-forced (180C conventional).

  2. Step 2

    To make the filling, combine the apples, lemon juice, cinnamon, brown and caster sugars in a medium saucepan. Cook for 5 minutes over medium heat until the apples are softened. Transfer to a 2-litre oven dish.

  3. Step 3

    Combine the ingredients for the oat topping and spread over the top of the apple mixture. Transfer to the oven and bake for 20 minutes.

  4. Step 4

    Mix together all the ingredients for the cornflake topping and spread over the top of the dish. Bake for a further 10 minutes, then remove from the oven. Serve with vanilla ice-cream.
