Adam Liaw’s Christmas ham cubanos are just the ticket while watching the cricket

Miami-style Cubanos are usually made with ham and roast pork together, but this Christmas version with glazed ham is delicious.

Ingredients

  • 8 panini rolls, halved

  • ½ cup American mustard

  • 800g leftover Christmas ham, thinly sliced

  • 24 slices Swiss cheese

  • 12 dill pickles, thinly sliced lengthways

Mojo mayonnaise

  • ¾ cup whole egg mayonnaise

  • ½ tsp cumin powder

  • ½ tsp dried oregano

  • 1 tbsp finely minced eschalot

  • 2 garlic cloves, grated

  • juice and grated zest of 1 lime

Method

  1. Step 1

    Combine the ingredients for the mojo mayonnaise and mix.

  2. Step 2

    Spread the inside of the top half of the rolls with the American mustard and spread the bottom half liberally with the mayonnaise. Cover both sides with slices of cheese. Place sliced pickles on top of the base, and add a generous amount of leftover Christmas ham.

  3. Step 3

    Close the sandwiches and cook on a lightly greased panini press or frying pan until toasted. Cut in half to serve.

Adam’s tip: Keep your Christmas to-do list on the fridge door where everyone can see it. When you can, delegate, or at the very least, people will leave you alone when they realise how busy you are!
