Orange and honey chicken skewers.William Meppem

Orange and honey is a great combination. I like metal skewers as they don’t need soaking, don’t burn, and are reusable.

Ingredients

  • 3 tbsp honey

  • 1 tbsp vegetable oil, plus extra for cooking

  • ½ tsp ground cumin

  • juice and grated zest of 1 orange

  • 1 tbsp tomato sauce (ketchup)

  • 1 tbsp soy sauce

  • 1 tsp dark soy sauce

  • ½ tsp salt

  • 750g chicken thigh fillets, cut into 3cm squares

  • 1 red capsicum, cut into 3cm square pieces

  • 1 red onion, cut into 3cm square pieces

Method

  1. Step 1

    Combine the honey, vegetable oil, cumin, orange juice and zest, tomato sauce, soy sauces, salt and chicken pieces, cover and marinate in the fridge overnight. Thread the chicken pieces onto skewers, adding a piece of capsicum or onion after every two pieces of chicken. Push the ingredients on the skewers tightly so there are no gaps between them.

  2. Step 2

    Heat a barbecue, grill pan or frying pan on medium heat and brush with a little oil. Grill the skewers, turning regularly for about 6 minutes until the chicken is caramelised and cooked through, then serve.
