Cucumber, feta and apple salad.William Meppem

Not a Greek salad, but I love the balance of a sweet and tart apple with salty feta and the freshness of cucumber.

Ingredients

  • 2 Lebanese cucumbers, deseeded and diced into ½cm cubes

  • ½ red onion, diced into ½cm cubes

  • 1 Granny Smith apple, cut into ½cm cubes

  • juice of ½ lemon

  • salt and black pepper, to season

  • 1 tbsp extra virgin olive oil, plus extra for drizzling

  • 150g feta

  • ½ tsp Greek oregano

Method

  1. Step 1

    Combine the cucumber, onion, apple and lemon juice and season well with salt and pepper. Add 1 tablespoon of olive oil and mix well.

  2. Step 2

    Transfer to a serving plate, crumble the feta on top and sprinkle the Greek oregano over the feta. Drizzle with olive oil and serve.

Adam’s tip: Season and dress this finely chopped salad just before serving as you don’t want the salt to draw too much moisture from the cucumbers.
