Adam Liaw’s caramel blondies
These delicious blondies are a simple mix-and-bake method. You can change the flavour with nuts or chocolate chips if you prefer.
Ingredients
½ cup melted butter
¼ cup olive oil
1 cup soft brown sugar
½ cup golden syrup
1 tsp vanilla extract
2 eggs
2 cups plain flour
1 tsp baking powder
¼ tsp salt
½ cup Caramilk baking chips
flake salt, for scattering
Method
Step 1
Heat your oven to 160C fan-forced (180C conventional). Line a 20cm square baking tin with baking paper.
Step 2
Whisk the butter, oil, sugar, golden syrup, vanilla and eggs to combine. Add the flour, baking powder and salt and fold together. Stir in the baking chips, then transfer to the baking tin and bake for 35-40 minutes. Remove from the oven, scatter with a little extra flake salt and cool completely in the tin. Slice into 5cm squares to serve.
