This super simple pizza is the slice of the summer – and it’s ready in minutes
The combination of bubbling golden cheeses, tart, salty white anchovies and fresh herbs make this white-based pizza ideal for summer. The best bit? It’s ready in 20 minutes, tops. Use the cooking time to make a simple green salad to serve alongside. Job done.
Ingredients
1 large oval store-bought pizza base
¼ cup mascarpone cheese
½ cup finely grated pecorino
¼ cup grated mozzarella
1 tsp finely grated lemon zest
1 garlic clove, crushed
6 white anchovies
chervil sprigs and snipped chives, to serve
Method
Step 1
Preheat the oven to 220C fan-forced (240C conventional). Line a baking tray with baking paper.
Step 2
Combine the mascarpone, pecorino, mozzarella, lemon zest and garlic in a medium bowl, and season with salt and pepper.
Step 3
Place the pizza base on the prepared tray and spread the cheese mixture over the base. Bake for 15 minutes, or until the cheese is golden and bubbling.
Step 4
Serve, topped with anchovies, herbs and plenty of freshly ground black pepper.
