Craving a quick high-protein meal for warmer days? This omelette, featuring minced pork belly and umami-rich XO sauce, is simple and satisfying. Best of all, it’s ready in less than 30 minutes.

Ingredients

  • 400g rindless boneless pork belly, chopped

  • 1 tsp peanut oil, plus extra to brush

  • 4 garlic cloves, crushed

  • ¼ cup XO sauce

  • ¼ cup oyster sauce

  • 8 eggs, lightly whisked

  • 1 baby wombok cabbage, leaves separated and roughly chopped

  • 1 cup purple shiso leaves, to serve (optional)

  • 1-2 tsp chilli flakes

Method

  1. Step 1

    Place the pork belly in a food processor and process until finely chopped.

  2. Step 2

    Heat 1 teaspoon of the peanut oil in a large wok over high heat. Add the pork belly and garlic, season with salt and pepper, and cook, tossing for 10 minutes, or until the pork starts to crisp. Add the XO and oyster sauces and cook for a further 5 minutes. Set aside.

  3. Step 3

    Brush a large non-stick frying pan with peanut oil and place over high heat. Add half the whisked egg mixture and swirl the pan to coat. Cook for 1-2 minutes, gently moving the egg with a spatula until just set. Top with half the cabbage, half the pork mince and shiso leaves, if using, then sprinkle with a little chilli. Remove from the pan and set aside. Repeat with the remaining egg mixture, cabbage, pork, shiso and chilli flakes. Cut each omelette in half to serve.
