The crisp texture and slight sourness of green apples, such as Granny Smiths, make them a great addition to a green salad.

Ingredients

  • 1 green apple

  • 1 tsp Dijon mustard

  • 2 tbsp apple cider vinegar

  • 3 tbsp extra virgin olive oil

  • pinch of sugar

  • salt and black pepper, to season

  • 120g green salad leaves

  • 100g blue cheese (optional)

Method

  1. Step 1

    Halve the apple and remove the core. Thinly slice one of the halves and combine the other in a small blender with the mustard, vinegar, olive oil, pinch of sugar, and a good sprinkle of salt. Blend to produce a dressing.

  2. Step 2

    Pour the dressing over the sliced apple and salad leaves and toss to combine. Crumble the blue cheese on top (if using), add plenty of ground black pepper, and serve immediately.

Adam’s tip: Most fruits contain a balance of sweet and sour, so when using
them in savoury dishes, enhance the sourness with vinegar or a squeeze of citrus.
