Potato and gruyere gratin

Ingredients
1 tbsp butter
3 large potatoes, peeled and thinly sliced
Sea salt and freshly ground black pepper
100g gruyere cheese, grated
1 1/2 cups hot chicken stock
1 cup cream, heated
Method
- Preheat the oven to 200C.
- Grease a medium-sized gratin/baking dish with the butter. Cover the base with potato slices, season well, then sprinkle with cheese (reserve half the cheese for later). Keep layering and seasoning until the potato and cheese are used up.
- Pour over the hot stock and bake for 40 minutes. Remove from the oven, pour over the warm cream, sprinkle with reserved cheese and bake for another 20 minutes, or until the cheese topping is lightly browned. Place under a hot griller to brown, if necessary.
