Sprinkle biscuits

These biscuits can be made up to a week ahead of time and stored in an airtight container, and then decorated on the day of the party.
Ingredients
125g margarine, softened
115g castor sugar
1 egg
210g plain flour
125g icing sugar
food colouring
assorted sprinkles
Method
Step 1
To make the biscuits, beat the margarine, sugar and egg using electric beaters until light and creamy. Add the flour and, using your hands, press the mixture together to form a soft dough. Turn onto a lightly floured work surface and knead for two minutes, or until smooth. Refrigerate, covered with plastic wrap, for 30 minutes.
Step 2
Preheat the oven to 180C. Lightly grease a baking tray.
Step 3
Roll the dough between two sheets of baking paper to a 5mm thickness. Cut into shapes using a cookie cutter of your choice. Place on the prepared tray and bake for 15 minutes, or until golden. Leave to cool a little on the tray before transferring to a wire rack.
Step 4
Place the sifted icing sugar in a bowl. Add three tablespoons hot water and a few drops of food colouring and stir until well combined. Dip the front of each biscuit into the icing, holding the biscuits over the bowl to allow any excess icing to drip off. While the icing is still soft, decorate with the sprinkles as desired.
