‘Scottish oatcakes with a dollop of peanut butter’: An artist’s day on a plate

8.30am After walking my dog, Bosco, I have a bowl of homemade muesli,
strawberries and yoghurt.

9am A first cup of black coffee while I send some emails and do some admin.

10am A second cup of black coffee before a Zoom work meeting.

12.30pm A Vietnamese chicken salad, some dark chocolate and an apple.

4pm Some Scottish oatcakes with a dollop of peanut butter.

7.30pm It’s my partner’s turn to cook dinner tonight, and he’s made us a lovely asparagus
risotto.

Top marks for … Discovering Scottish oatcakes! They are a fabulously nutritious snack, being rich in beta-glucan, a soluble fibre that aids in blood glucose and cholesterol control. Adding peanut butter boosts your healthy fats, plant protein and magnesium. Just be sure to choose one with no added emulsifiers or sugar.

If you keep eating like this you’ll … Just have to watch you meet your iron needs, as this is commonly deficient in women under 50 when requirements are high. The best absorbable sources are red meat and molluscs, which are both absent from this day.

Why don’t you try … Including lean red or game meat such as beef, lamb, venison or kangaroo three times a week. Choose mussels or oysters when you can. And ensure you include a vitamin C-rich food when you have plant sources of iron such as beans or green vegies.
