What the Anastasia Beverly Hills founder eats in a day on the keto diet

Make-up entrepreneur and author Anastasia Soare, 66, shares her day on a plate.

6.30am My day starts with coffee. I’m doing the keto diet, so I add butter and XCT oil. I also take omega-3, omega-6 and omega-D3.

9am After my workout, I enjoy an espresso and some fresh fruit.

Noon I snack on a hard-boiled egg and nuts, take MK-7 [vitamin K2] and [amino acid] L-arginine, then have a salad with grilled chicken.

7pm Dinner with work colleagues. We go to for Italian and I order the grilled sea bass with a glass of white wine. Before bed, I take magnesium.

Top marks for … The wholefoods in your diet including the egg, nuts, fish, chicken, salad vegetables and fruit. These contain a wealth of nutrients beyond those you find in supplements. Your coffee also adds antioxidants and may help brain health and performance while reducing the risk of some diseases.
If you keep eating like this you’ll … Risk negatively altering your gut microbiome. Keto is a therapeutic diet with some clinical uses. However, it makes it very difficult to eat enough fibre, especially the prebiotic fibres that fuel the bugs in your gut. In the long term this may impact your immune system.
Why don’t you try … Swapping the butter in your coffee for extra virgin olive oil, which has healthier fat and more polyphenols. Include more fibre-rich fruits such as raspberries and passionfruit and order a side of fibre-rich vegies, such as broccoli, Brussels sprouts or dark leafy greens, at dinner.
