What textile designer Ellie Whittaker eats in a day

Textile designer Ellie Whittaker, 37, shares her day on a plate.

6am A homemade latte.

7am After an HIIT [high-intensity interval training] cardio session, I scoff a protein cookie.

11am Some organic brown rice and riceberry, with tinned tuna, avocado, kale, packet sesame dressing and cashews. Plus two pieces of my husband’s home-made fudge.

2pm A coffee and a banana.

6pm Air-fried chicken for the kids and barramundi for my husband and me, served with kale, packet mayonnaise, sweetcorn and air-fried sweet potato. Dessert is a home-made chocolate self-saucing pudding with thickened cream. I follow it with a glass of shiraz.

Top marks for … Your lunch ticks a few nutrition boxes as you get fibre from the wholegrains, good fats from the avocado and nuts, protein from the tuna and nutrients and antioxidants in the kale. Your dinner of fish with vegies is also terrific. The only thing I’d change is the bought dressing, which is based on ultra-processed oil.

If you keep eating like this you’ll … Fall short on the calcium you need to keep bones and teeth healthy. You also lack the diversity of vegies needed for optimum health and you have only one piece of fruit.

Why don’t you try … Making your own sesame dressing using tahini as a base. Skip the packaged protein cookie (it’s a processed food) for a bowl of overnight oats or muesli with berries, yoghurt and milk to boost your calcium.
