‘Coffee with a drop of lion’s mane’: Does a dietitian approve?

7am Coffee at home with a drop of lion’s mane [mushroom powder] before a run with our border collie, Billie.

8am Homemade gluten-free muesli – I’m coeliac– and Greek yoghurt with banana and passionfruit.

11am I enjoy a strangely addictive Hawaiian delicacy, a chocolate-coated pineapple snack, with the team in the office. Chocolate is a daily essential.

1.30pm Lunch at my desk of pumpkin and fennel risotto and a serve of roast vegies. I prep meals in batches on the weekends to take for lunch or for the kids to raid when hungry.

3pm A cup of Earl Grey tea and a pear to beat the mid-afternoon slump.

6.30pm Jarlsberg cheese on gluten-free crackers with a glass of natural wine from the Mornington Peninsula.

7.30pm Dinner with family is a RecipeTin Eats’ slow-roasted lamb recipe that I put on before leaving for the office. It’s served with peas, steamed potatoes and sweet potato.

Top marks for… Your prepping of meals both at the weekend and before work, helping to ensure you have homemade meals close at hand. These are almost always healthier than takeout.

If you keep eating like this you’ll… Need to watch your fibre intake as many gluten-free foods are low in fibre. This day was also short on anti-inflammatory omega-3 fats, also crucial for brain health.

Why don’t you try… Using brown, black or red rice to make the risotto and leave the skins on potatoes and sweet potatoes to boost your fibre intake. Eat cruciferous vegetables such as Brussels sprouts and broccoli regularly. Enjoy oily fish three times a week and add chia or hemp seeds to breakfast.
